Introducing our Head Chef
Mr. Chai Ngen Kin
Our Executive Head Chef, Mr. Chai Ngen Kin, is an award-winning chef with 23 years of culinary expertise and innovation. He joined us from Tung Lok Classics, and was formerly at Restaurant Ten where he honed his flair as a creative and highly-skilled chef.
His career started back in 1992 when he was just an apprentice in Yunnan Garden Restaurant and his tough training paid off when he joined the “National Fried Rice Competition” in 1997, and won First Prize with his signature “Yuan Yang Spinach Fried Rice”. He credits this win for motivating him to continue on his chosen path, and working his way up the culinary ladder.
Over the years, the culinary industry has recognized Chef Chai’s achievements with a series of awards and accolades, which have brought him fame as a celebrity Chef. He has represented Singapore for many International competitions such as the “The Iron Chef Thailand TV programme” in 2013, and the “International Culinary Competition” in 2014. Chef Chai along with his Team Singapore stood tall amongst its international counterparts, finishing as Champion in both competitions. This was a remarkable achievement for Singapore especially when Singapore was ranked 1st amongst the Asian nations at the end of the competitions.
Unique to any Chinese restaurant, Chef Chef takes a western approach towards the service and presentation of his dishes, while maintaining a traditional approach to cooking with herbs and natural flavourings. He is set to break out of traditions and take bold steps to reinvent Chinese cuisine with a touch of traditional Chinese herbs and quality raw materials to create his outstanding flavors.
Chef Chai is dedicated to ensuring that his work truly represents all that he stands for – exceptional quality and remarkable taste. Until today, the skills, techniques and commitment instilled in him are clear, as evidenced by his multiple awards. We invite you down to Fung Ding Hung Restaurant to experience the creations of this true master Chef.
